Fried Minced pork with Thai basil

This dish can be as spicy or not, as you like from the chillies and garlic.  The basil leaves give it a lovely aroma and flavour.

It is very quick and easy to make when you get home from work.  Eat with rice and stir fried vege of your choice.

Serves 4
2 Tbsp oil
1 c minced pork
1 medium sized onion
5-6 cloves of garlic (I love heaps)
a few small chillies or 1 Tbsp of Thai Sweet Chili Sauce
big bunch of Thai basil leaves (sweet basil is OK but not as good)
Splash of water or chicken stock (just to keep it moist as you cook)
1 tsp sugar 
2-3 Tbsp Oyster Sauce
2 tsp fish sauce (salt)
splash of dark soy sauce
Prep

1. Heat oil in a wok over medium heat
2. add crushed garlic, cook a little and then add mince stir until cooked - only a few minutes
3. add onion, chillies and stir to combine
4. add water, sauces
5. stir and add basil leaves and a pinch of sugar (don't add this until the end as it makes it burn)
6. cook another minute or two, then serve on rice.

So easy and everyone will love it, not just the Thai students.
This is also good for rice lunch box as it does not need to be heated up - still yummy to eat cold.
